Koli (a Michellin-starred restaurant)

Koli is one of the two Michelin-starred restaurants in Monterrey, México. Forma-Foods has been at Koli during the 2024-2025 season.

In collaboration with Koli’s Chef, Rodrigo Rivera Río, we co-designed a beat that wanted to be meat!

3 elements of our technology

You will not believe it… this is 3D-printed food: Fully plant-based path for a more sustainable way of eating protein.

We 3-D print our steak using chaotic flows!

The printheads (nozzles) of our 3D printers are equipped with small deflectors that divide and reorient the flow of the three pastes that we use to originate chaotic flows and create multiple layers of them and to emulate the microscopic fibers that real meat possesses.

We built our 3d-printers

Commercial 3D printers have limited capacity to extrude highly viscous materials. Since the pastes that we use in our process are highly viscous, we had to build our own 3D printers, integrating step motors, microcontrollers, stainless steel components, and our own 3D-printed nozzles.

Our printheads are patented

The printheads that we use to fabricate our plant-based meat have been patented in México, and two of our scientific founders are coinventors in this patent. We proudly manifest that we develop the technology that we use to develop nutritious, sustainable, and delicious projects for you.
